This month we'll pour a keg of dry-hopped Organic RIOT X Ale.

The naturally carbonated keg will be pouring from the bar top starting at 3:00 PM.

Tickets Now on Sale for BELGIANFEST


The Washington Beer Commission is launching a new beer festival in early 2010.
BELGIANFEST will feature up to 25 breweries from across the state, many making one-off beers especially for this event.

Tickets for this Jan. 23 event are now available at both Elliott Bay pubs and on line via Brown Paper Ticket. The admission cost is $30 / per session (12-4:00 or 6-10:00) and includes a glass and tickets for ten 4 oz. tastes.

We'll be pouring four different beers: Hop von Boorian (Belgian-style IPA), Gulden von Boorian (new recipe for 2010), Blended Brett Beer, cask Red von Boorian.

December Barrel-aged Beer Release


On the FIRST of each month we release a keg of our barrel-aged beer. Normally, each pub has a different variety, giving barrel beer fans an opportunity to try both!

For December, however, we're releasing the same barrel-aged beer in both pubs:


Tabasco barrel aged Pilot Light. Yep, tabasco...like Louisiana hot sauce tabasco. It's kinda hot, but not too over-the-top. Pairs well with hot wings! See ya Tues. (tomorrow) Dec. 1 for a pint to remember.

CASK RELEASE : 11.30.09 : Organic Riot X


Two kegs of Organic Riot X will be cask-conditioned this week then tapped at each of our pubs on Monday, Nov. 30 to commemorate the 10th anniversary of the WTO protests in Seattle.

Riot X was hopped at ten different points during the brewing and aging process, yielding a deliciously potent mixture of malty goodness and sublime bitterness.

Stop by for a pint. However, if you miss this special release, fear not. We'll be aging the beer another couple of weeks then foisting it upon the natives who never asked for it in the first place...kind of like the WTO!

NEW RELEASE : Noäle Holiday Ale


Hurry down to either or both of our pubs to get a taste of the 2009 Noäle Holiday Ale.

The beer, based loosely on the "Dunkel Weizenbock" style of hearty dark wheat ale, was released yesterday, just in time for a wee nip before Turkey Day arrives.

It will also be pouring Dec. 4 and 5 at the Winter Beer Festival @ Hale's in Fremont.

Elliott Bay Wins Brewery Bowling Challenge


Last night at the Beer Church Turkey Bowl fundraiser for the West Seattle Food Bank, Elliott Bay Brewery won the Brewery Challenge, beating out a number of other teams of bowlers from local breweries. Check out the YOU TUBE video of owner Todd Carden receiving the winner's trophy.

Being Brewed : Organic Riot X Ale


Today in Burien we brewed a special batch of our perennial favorite ORGANIC RIOT ALE in time to release it on 11.30.09 to commemorate the 10th anniversary of the WTO riots in Seattle.

We adjusted the hops a bit this time around, making 10 additions throughout the brewing process, including one infusion of hop pellets in the fermenter for an aromatic boost.

Varieties include: Magnum, Chinook, Cascade, Simcoe, and Amarillo and ABV should wind up about 7.25%.

Being Brewed : Hoppus Callosum


Yep...here it comes again...our HOPPY and STRONG Double IPA


Brewed in West Seattle with Columbus, Chinook, Amarillo, and Simcoe hops, Hoppus is no wallflower. Rather, its in-your-face goodness reaches up to grab you then slaps you about the face with a big helping of 7.6% alcohol-by-volume. This is your brain on hops!

The event takes place in Fremont @ Hale's Palladium on Friday, Dec. 4 (5:00-10:00) and Sat. Dec. 5. (1:00-10:00). If you're a WABL member, doors open an hour early each day, but remember your passport!

Noäle Holiday Ale and Demolition, a Strong Pale Ale.

Holiday Ales @ Elliott Bay


It's that time of year again when we throw open the doors of both our pubs to some of the wonderful and hearty beers of the season.

Normally we serve only guest beers from our fellow Washington brewers, but during November and December we'll be casting our net a bit wider to include some of our favorite holiday creations from Oregon, California, Colorado, and beyond.

These taps will change frequently throughout these last two months of the year, so check in often to see what's currently on tap.

Our own No
äle Holiday Ale will be released the week of Thanksgiving and will (hopefully) last until the end of the year.

Being Brewed: Hop Scotch


HOP SCOTCH, our strong dark amber ale, has been brewed in Burien.

The batch is now aging for a while in a conditioning tank, preparing for its release. This year's batch was dry-hopped with Cascade, Amarillo, and Chinook to help boost the hop aroma of a beer that is already rich in hop flavor.

Great Western Malting Visit


Rob Liedl, head maltster at Great Western Malting Co., was kind enough to host a tour yesterday of their malting facility in Vancouver, WA.

Great Western provides much of the organic base malt that constitutes up to 80% of our year-round and seasonal beers. We also had the privilege of tasting their first batch of organic wheat!

Pumpkin Fest This Weekend !


Elysian Brewing Co. is hosting its annual Great Pumpkin Festival this weekend, starting at 12:00 noon, Saturday October 10 and ending at 6:00 PM, Sunday, October 11.

Elliott Bay's contributions this year will include both a CASK-conditioned version of our Organic Mashing Pumpkin Ale, aged with bourbon-soaked oak chips, and another keg aged with rum-soaked oak chips. Both are quite subtle, despite weighing in at over 7.5% ABV!

Burien Beer Dinner Announced : 11/11/09


We'll be hosting our next Burien Beer Dinner on Wednesday, November 11, 2009.

The food offerings and beer pairings are still being worked out, but we've sold these out in the past, so be sure to get your reservations early.

DAY 5 : West Seattle Hop Celebration


TODAY: Friday is the final day of our week-long Celebration-o-Hops in West Seattle.
To close the week out we will be pouring two beers featuring the use of fresh hops from Gamache Ranch near Yakima:

1) Hop Harvest Ale: brewed in Burien using fresh Amarillo hops in the brew kettle and dry-hopped in the fermenter with Amarillo, Columbus, and Centennial pellets.

2) Fresh Hopped Elliott Bay IPA: we stuffed as much fresh Amarillo hops into the keg as was feasible, then filled the keg with our house Elliott Bay IPA. Tasting next to the regular and dry-hopped versions will make for an interesting comparison opportunity.

DAY 4 : Hop Celebration @ West Seattle Pub


TODAY/Thursday will feature two recipes from Brewer Dan of the West Seattle brewery:

1) RyePA is an IPA with 5.0% ABV and around 70 IBUs, but also 20% of the grain bill is Rye. Rye adds a spicy and grainy quality to the brew to balance out the hoppy bitterness.

2) Hoppus Callosum is a heavyweight, weighing in over 8% ABV with 71 IBUs. Focusing the hopping on late additions and a substantial dry hopping makes this a very aromatic example of the power of hops.

Day 3 : Celebration of the Hop in West Seattle


TODAY/Wednesday will feature two Belgian-style IPAs:

1) Imperial von Boorian is 7.1% ABV and 100 IBUs and is dry-hopped w/ Chinook, Amarillo, and Simcoe hops.

2) Hop von Boorian is 5.8% ABV and 70 IBUs. Think Trippel w/ a load of hops.


Both have distinctive Belgian yeast strain characteristics and a moderately high level of fruity esters owing to the warmer fermentation temperatures.

Day 2 : Hop Celebration in West Seattle


TODAY/Tuesday
we will feature two brews from our Burien location:

1) Hellmouth Imperial IPA is a 7.1% ABV and 100 IBU brew, dry hopped with Chinook, Amarillo and Simcoe hops.

2) Highline IPA is the house IPA of the Burien pub, and comes in at 5.8% ABV and 80 IBUs.

Tuesday, we will also be having a "Meet the Brewers" Night from 8:00 till 9:30pm. All three brewers from our two pubs, Doug, John, and Dan, will be on hand to chat with and answer questions.

We will also be serving a special gravity fed cask of our Riot Strong Pale Ale dry hopped with fresh hops from Head Brewer Doug's recent trip to the Gamache farms in Yakima.

Don't forget, Tuesday is also "Top it off Tuesday" at the pub, where pitchers can be had for only $9.00 from 3:00 PM to close.

DAY 1 : Hop Celebration in W. Seattle


Today/Monday
, we will feature two of the Elliott Bay stalwarts:

1) our GABF medal-winning Demolition Imperial Pale Ale weighs in at 7.25% ABV and 103 IBUs, and is dry hopped with Cascade and Chinook hops.

Customers will be able to order a sample tray of five 5 oz. samples of hoppy brews made at our two breweries
for $7.50. Three of the samples will always be our Elliott Bay IPA, Dry-Hopped IPA and a cask-conditioned hoppy treat that will rotate as the casks empty. The remaining two samples will be of the daily featured beers.

In addition to the beer, our Executive Chef, Kerry White, has put together a small plate of various treats to pair with the hoppy brews, for $6.95. The plate includes: trout pate, smoked scallops, aged white cheddar, house made pickles, crackers and summer sausage.

Mashing Pumpkin Release Date: 10/03/09


Our Organic Mashing Pumpkin Ale will be released in both pubs next Sat. 10/3. The date coincides w/ the Oktoberfest in West Seattle.

Elysian Brewing on Capitol Hill hosts its annual Pumpkin Beer Fest the following Sat. and Sun. 10/10-11. Look for a bourbon + oak cask version and another w/ rum + oak chips at this two-day event.

We'll pour two specials version of Mashing Pumpkin @ Elysian: one infused w/ Bourbon and another w/Rum-soaked oak chips. Don't miss it and the many other delicious versions that will be on hand.

We're readying the EBay crew to board a plane to Denver and take in one of the biggest beer events in North America: the Great American Beer Festival, where over 2,000 beers pour for three days.

The event runs September 24-26. But don't even think about getting last minute tickets: the party has been sold out for over a month!

If you can't be there in person, fret not. The Brewing Network will be hosting a webcast of the medal ceremony beginning at 1:00 Mountain time (12:00 noon in Seattle). Check out their site and take part in the festivities and cheer on the home team!

Hop Celebration in West Seattle Pub


The coming of fall brings the annual hop harvest in Eastern Washington and across the world. The hoppy minds at Elliott Bay Brewery and Pub in West Seattle decided to dedicate the week of September 28th- October 2nd to celebrate hops in our pub.

Each day, customers will be able to order a sample tray of five 5 oz. samples ($7.50) of different hoppy brews made at our two breweries. Three of the samples will always be our Elliott Bay IPA, Dry Hopped IPA and a cask-conditioned hoppy treat that will rotate as the casks empty. The other two samples will rotate each day to give customers a chance to try ten additional hoppy selections made by our brewers.

The general lineup looks like this:

Wed.: Hop von Boorian + Imperial von Boorian

NOW ON TAP: West Side Brown


NOW ON TAP: We just tapped the latest release from our West Seattle Pub, West Side Brown Ale. But right now it's pouring only in Burien.

We've had such a good reception for Brown Ales poured in WS that we thought it was time to brew one there.


This recipe is a bit lighter in color than our B-Town Brown and includes a small dose of Briess malt smoked with cherry wood. Check it out and let us know what you think.

AHA Rally This Weekend


Drop by Elysian Brewing on Capitol Hill this Saturday, September 12 between 3-7:00 PM for tastes of 16 Pro-Am beers brewed by Washington brewers for the 2009 Great American Beer Festival. Elliott Bay will be pouring a Barleywine-style ale aged in a bourbon barrel.
