CASK Beer in Burien Today



On the second Wednesday of each month we release a keg of CASK-CONDITIONED beer at our pub in BURIEN that was brewed in West Seattle.


This month's selection is WEST SIDE BROWN ALE brewed with our house Belgian-style yeast and just a pinch of malt smoked over cherry wood. The combination of flavors work wonders together to produce a fine blend of malty sweetness and the faintest hint of hops.

Cask Third Thursday in West Seattle : 02.18.10


Plan to swing by our West Seattle pub at 3:00 PM TOMORROW for the tapping of this month's CASK beer : Burien Birthday Beer #3, an Imperial-strength IPA utilizing Bravo, Cascade, Amarillo, Simcoe, and Columbus hop varieties.

This is the FIRST opportunity to taste the 2010 version of of our annual creation. The remainder of the batch will be released on March 1 in anticipation of the party planned for Sat. March 6 in Burien to celebrate our third year in business.

Hoppus Callosum : NOW ON TAP


Yep...here it comes again...our HOPPY and STRONG Double IPA

Brewed in West Seattle with Columbus, Chinook, Amarillo, and Simcoe hops, Hoppus is no wallflower. Rather, its in-your-face goodness reaches up to grab you then slaps you about the face with a big helping of 7.6% alcohol-by-volume. This is your brain on hops!

BREWED THIS WEEK : Pinetop Red Ale


Brewer Dan at the West Seattle pub brewed Pinetop Red Ale YESTERDAY.

It aims to infuse the fairly malt-forward beer with a robust blend of both piney and citrus hoppiness using the Chinook and Ahtanum hop varieties.


Look for it on tap in just a few weeks in both our locations. We'll have a cask-conditioned version on tap in Burien on Wed. 2/10.

Tickets Now on Sale for BELGIANFEST


The Washington Beer Commission is launching a new beer festival in early 2010.
BELGIANFEST will feature up to 25 breweries from across the state, many making one-off beers especially for this event.

Tickets for this Jan. 23 event are now available at both Elliott Bay pubs and on line via Brown Paper Ticket. The admission cost is $30 / per session (12-4:00 or 6-10:00) and includes a glass and tickets for ten 4 oz. tastes.

We'll be pouring four different beers: Hop von Boorian (Belgian-style IPA), Gulden von Boorian (new recipe for 2010), Blended Brett Beer, cask Red von Boorian.

Being Brewed: Hop Scotch


HOP SCOTCH, our strong dark amber ale, has been brewed in Burien.

The batch is now aging for a while in a conditioning tank, preparing for its release. This year's batch was dry-hopped with Cascade, Amarillo, and Chinook to help boost the hop aroma of a beer that is already rich in hop flavor.

Pumpkin Fest This Weekend !


Elysian Brewing Co. is hosting its annual Great Pumpkin Festival this weekend, starting at 12:00 noon, Saturday October 10 and ending at 6:00 PM, Sunday, October 11.

Elliott Bay's contributions this year will include both a CASK-conditioned version of our Organic Mashing Pumpkin Ale, aged with bourbon-soaked oak chips, and another keg aged with rum-soaked oak chips. Both are quite subtle, despite weighing in at over 7.5% ABV!

Cask Third Thursday in West Seattle


This month's cask beer from Burien will be pouring in our West Seattle pub beginning at 3:00 on Thursday, July 16.

Patrons will be the first to taste, HELLMOUTH IMPERIAL IPA, the latest in our series of Imperial-style ales. It is essentially a dry-hopped version of our Imperial von Boorian, but brewed with our standard house yeast instead of the Belgian strain we use for the von Boorian series.

The name refers to "a focal point which serves as a portal between earth and Hell. The Hellmouth attracts demons and other supernatural creatures, becoming a "hot spot" for supernatural activity." We thought that was a pretty good description of what happens when we ferment a 7% ABV beer in Burien!

Dry-hopped with Amarillo and Cascade.

Picking Evergreen Tips


Here's a "live action" shot of Dan Ashley, brewer at our West Seattle pub, picking evergreen tips in Lincloln Park this past Monday morning. He took them back to the brewery and added them to kegs of Pinetop Red Ale that will be cask-conditioned.

We collected needles from a downed Western Hemlock limb and fresh green tips from a live
Western Red Cedar, chopped them, crushed them, and steeped them each in a keg so we can determine which flavors and aromas we appreciate the most. The Hemlock definitely screamed "Tannenbaum" and the Cedar was much more lemony.
