Cask Third Thursday in W. Seattle


Join us on this Thursday, May 21 at the West Seattle pub for our monthly tapping of a cask-conditioned beer produced at our sister pub in Burien.

This month we'll pour a keg of Imperial von Boorian, a Belgian
Strong Pale Ale dry-hopped w/ Amarillo and Simcoe.

The keg was naturally carbonated and will be pouring from the beer engine starting at 3:00 PM.

The latest seasonal beer on rotation in West Seattle is our Wit von Boorian (a.k.a. Brother Brian's Delight)...our first collaboration w/ Trappist monks!

We brewed this light, flavorful, and cloudy wheat beer with some very special ingredients: chamomile flowers, coriander seeds, and orange marmalade from St. Joseph's Abbey, a monastery in Spencer, MA. Brother Brian was kind enough to expedite a shipment to us and we are most pleased with the results.

Swing by for a pint of this blessed springtime elixir.


Cooks Illustrated selected the Trappist Orange Marmalade as its favorite, saying: "Trappist Seville Orange Marmalade earned strong points for its natural orange flavor and was also the favorite of our testers who liked a solid level of sweetness as well as a moderate amount of tartness." These same qualities also came through in the finished beer along with an enticing chamomile aroma.

Picking Evergreen Tips


Here's a "live action" shot of Dan Ashley, brewer at our West Seattle pub, picking evergreen tips in Lincloln Park this past Monday morning. He took them back to the brewery and added them to kegs of Pinetop Red Ale that will be cask-conditioned.

We collected needles from a downed Western Hemlock limb and fresh green tips from a live
Western Red Cedar, chopped them, crushed them, and steeped them each in a keg so we can determine which flavors and aromas we appreciate the most. The Hemlock definitely screamed "Tannenbaum" and the Cedar was much more lemony.

Brewing Today : Pinetop Red Ale


Brewer Dan at the West Seattle pub is brewing a new recipe TODAY that we're calling Pinetop Red Ale.

It aims to infuse the fairly malt-forward beer with a robust blend of both piney and citrus hoppiness using the Chinook, Ahtanum, and Northern Brewer varieties.


Look for it on tap in just a few weeks in both our locations. We'll also be pouring a dry-hopped and cask-conditioned version at the Friday night session of the WA Brewers Festival at St. Edward State Park in Kenmore on June 19.

We'll be selling tickets too or you can buy them on line.

Now on TAP: Organic Demolition Ale


DEMOLITION, our medal-winning Strong Pale Ale, is back on tap in the Burien Brewhouse.

Hopped with a blend of SIX different varieties, including Northern Brewer, Magnum, Simcoe, Chinook, Cascade, and Amarillo, this amber-ish ale is roughly 7.25% ABV and over 120 IBUs.

Swing by Burien for your after-work beer and enjoy the in-your-face hoppiness atop a mellow malt background. It'll do ya good, 'cause it's ORGANIC!

Organic Beer Fest in PDX


JUST RELEASED : The list of beers that will be available at the North American Organic Beer Festival taking place in Portland, OR on the weekend of June 26-28.

We'll be pouring two beers, the Organic Hop von Boorian and our Organic Coffee Stout.

This is a really nice event that takes place in Overlook Park in North Portland. You can even get there using the MAX light rail system.

Cask Second Wednesday in Burien

This month we'll pour a keg of dry-hopped California Ave. IPA, made by the very capable hands of Brewer Dan Ashley.


The keg was naturally carbonated and we'll be pouring it from the beer engine starting at 3:00 PM.

Craft Beer Week Is Here!


Celebrate American Craft Beer Week this week with a trip to your favorite brewpub, local watering hole, or venerable ale house. Fellow craft beer lovers across the nation will be doing the same, so you'll be in good company. Read the Declaration of Beer Independence drafted by the Brewers Association of Boulder, CO.

As it happens, it's also Seattle Beer Week and events are happening all around town, including an event Tues., May 12 in our West Seattle pub called "Meet the Von Boorians." Between 4:00-10:30 PM come by for a sampler tray of five different house-brewed Belgian-style ales along with a helping of frites and receive a commemorative tulip-shaped glass embossed with the Von Boorian logo, all for just $12.00.

NOW On TAP : Black IPA


BLACK IPA : Loosely based on a Schwarzbier (Black Lager) recipe, this 6.3% ABV ale is dry-hopped twice with Cascade and Amarillo hops.

Appearance: Opaque black with thick, tan head

Aroma: Complex malt roasty-ness with hints of herbal hops

Flavor: Medium bodied with robust blend of dark malts

History: A still-emerging style also known as "Cascadia Dark Ale"

New Tanks Coming to Bruien


We're adding a couple of new fermenters to the brewery in Burien. This move will allow us to serve more of your favorite hoppy beers more often.

Think Demolition, Riot, Unintention Ale, Hop.us Callos.um, Cali Ave. IPA, Imperial von Boorian, Pro-Am IPA, etc.

If all goes as planned, we should have them in place by late June...just in time for the busy summer season. SWEET!
