While he's been "retired" from the local brewing scene for a number of years, Jason was the original brewer at Pike Place Brewing on Western Ave., helped start Fish Brewing in Olympia, worked at Redhook when it was in Fremont and Pyramid when they still made beer on Royal Brougham. Suffice it to say, he earned his chops "back in the day" when craft brewing was in its infancy in Seattle. He's got lots of good stories to tell too!<br /><br />We're very proud to have this local brewing legend agree to work with us to develop a beer for such a momentous and auspicious occasion. The recipe incorporates some unique ingredients, our Belgian yeast strain, and possibly some different hop varieties that we've not brewed with before. This beer was brewed by Anacortes Brewing using a our Belgian yeast strain. When the beer was done fermenting, they brought some kegs back to us and we aged them in the Brettanomyces barrels housed in our Burien brewery. A couple of months later, the beer had matured to a point where we liked the taste, and now it's ready to serve.</span><br /><br /><span style="font-family:verdana;">The beer is definitely sour, but with a faint layer of sweetness left over from the sugar remaining in the base beer. Be prepared for a wee bit of pucker, but that's the yeast talking, so listen up! Originally brewed back in September of 2008, we aged some of the batch in a Syrah barrel from <a href="http://www.delillecellars.com/"><span style="font-weight: bold;">DeLille Cellars</span></a> in Woodinville and some in a Bourbon barrel from <a href="http://www.heaven-hill.com/main.shtml"><span style="font-weight: bold;">Heaven Hill Distillery</span></a> in Bardstown, Kentucky.</span><br /><br /><span style="font-family:verdana;">The Syrah version has taken on a bit of cherry tartness while the Bourbon version has maintained all the char and vanilla it had when we first tapped it in late 2009. Together they are divine!
